In my final kitchen class we made a display cake. I think this was my greatest challenge. I sill consider myself a baker, not a decorator. My original cake was a much different design. Chef Elizabeth told me, point blank, that was beneath my skill set and I needed to pick something that would be a challenge. So I leaped to a cake that required painting and making flowers. The cake itself is styrofoam and it is covered in fondant. I then painted the cake with luster dust and made flowers with a 50/50 mix of gumpaste and fondant. Start to finish it took about three weeks, we had other class work to do as well. It was a really fun project.
